Gears of War is a great Third-Person shooter, and you can turn off the bad language and gore in the options menu.
Call of Duty 4 is my personal favorite First-Person Shooter on the 360, and I am pretty sure it has some cursing in it, but nothing terribly awful. Although I am pretty sure I heard S*** once or twice, but it is not very often at all.
Halo 3 is good too, especially if you played and enjoyed any of the other Halo games. Again, some mild cursing.
Rainbow Six Vegas 2 is another really fun one, but I personally feel it is at its best online. It is a tactical shooter, so no running and gunning. It is pretty slow paced, as well. This game has a little more swear words in it than the previous two, but still not much.
Also, if you play any of these games online (through Xbox Live), be aware that many players curse online. You can Mute them or turn off the voice of all players but those in your friends list if you are worried about the cursing.
There are a few games to avoid, as well, mainly because of cursing. The Darkness is a very dark game with alot of cursing, and is particularly graphic. Turning Point is another one to avoid, but not because of being "mature", but because it is pretty terrible.
